Research interests of Associate Professor Anna Rzepecka-Stojko include: anti-atherosclerotic and antioxidant activity of polyphenol-rich bee pollen extract; obtaining active substances from bee products and testing their antioxidant activity and optimal storage conditions; testing the biological activity of active fractions obtained from bee products; the influence of selected food ingredients and selected xenobiotics on maintaining the pro-oxidative-antioxidant balance; cytotoxic activity of polyphenols and flavonoids found in propolis against selected breast cancer cell lines.
Associate Professor Anna Rzepecka-Stojko also specializes in the assessment of: - the antioxidative properties of bee pollen extracts examined by EPR spectroscopy; - the polyphenol content and antioxidant activity of bee pollen extracts from Poland; - the polyphenols from bee pollen: structure, absorption, metabolism and biological activity; - anti-atherogenic activity of polyphenol-rich extract from bee pollen; - Protective effect of polyphenol-rich extract from bee pollen in a high-fat diet.
